The Cafe Boulud alum will debut Bludorn next week

Bludorn, the much-anticipated restaurant from chef Aaron Bludorn, will officially make its Houston debut next week.

The restaurant is set to kick open the doors at 807 Taft Street — in the space that most recently housed the Pass and Provisions — on August 21, according to a press release. It’s the first Houston restaurant from Bludorn, an accomplished chef who’s appeared on Netflix’s The Final Table and worked in kitchens like Daniel Boulud’s Cafe Boulud, and his wife Victoria Pappas, a daughter of Houston’s most iconic restaurant family.

The space is decked out in a mid-century aesthetic with natural woods and neutral colors, along with a nine-foot-tall mural of magnolia groves drawn by Houston artist Jonathan Paul Jackson. In addition to the dining room, the space also includes an upstairs private dining room and an outdoor patio.

As far as the menu is concerned, look forward to dishes inspired by European technique and made with Gulf seafood, like cioppino made with local catch and bacon-wrapped quail garnished with huckleberry and rosemary. Pastry chef Alejandra Salas, also an alum of the Daniel Boulud culinary empire, has developed a menu of enticing desserts like a hazelnut marjolaine with Nutella ice cream and chocolate-caramel molten cake.

As with any restaurant opening during the pandemic era, the restaurant has also implemented a number of safety protocols ahead of its debut. Employees will have their temperatures checked daily and are required to wear personal protective equipment, and the dining space has been “reconfigured” to accommodate socially distanced diners. Diners will also be able to order via QR code menus and will have access to multiple sanitation stations.

When it debuts, Bludorn will be open for dinner only Monday through Thursday from 5 p.m. to 10:30 p.m., and reservations are required.
