Expect wood-grilled fish, fresh seafood, and more dishes from former Brennan’s executive chef Joe Cervantez

Joe Cervantez, the former executive chef at Houston dining staple Brennan’s, has officially signed on to helm a new waterfront oyster bar and restaurant in the Houston suburb of San Leon.

The new eatery, called Pier 6, is expected to open later this summer at 113 6th Street. It’s the first restaurant from the family behind Prestige Oysters, one of the leading oyster distributors in the Texas Gulf. San Leon, the tiny hamlet about 40 miles south of Houston on a peninsula in Galveston Bay, is already known for Gilhooley’s, the low-key biker bar that’s been serving up raw Gulf oysters since 1987.

Pier 6, which will be situated right off the Houston Ship Channel, will feature tide-to-table dining experiences, where diners can watch working fishing boats while eating fresh Gulf seafood, “often plucked out of the sea mere hours before consumption,” according to a press release.

Pier 6’s raw bar will serve crudos, seafood towers and oysters on the half shell, with a focus on Gulf seafood. Cervantez, who was also an executive chef at Killen’s Steakhouse, will be serving up wood-grilled fish and locally sourced meats spiked with Cajun flavors and techniques, reflecting Cervantez’s time in the kitchen at Brennan’s of Houston.

Raz Halili, second-generation oyster purveyor and president of Prestige Oysters, will run Pier 6’s operations. In a statement, Halili says he eventually hopes to build a small oyster farm in the waters near Pier 6. Eventually, the spot also hopes to add table-side oyster roasting, shucking classes, oyster harvesting in the bay, fishing tournaments and more. For now, the duo is focusing on getting the doors open.

When it does arrive, Pier 6 will open daily for lunch, dinner and late-night drinks, plus weekend brunch.
